VEGETARIAN AND VEGAN
Mushroom gravy- with mushrooms or just mushroom stock- either way
take sliced mushrooms and sautee' them with shallots and garlic, a lil Dr. Bronners liquid aminos (bragg will do)
in butter or veg oil of choice- lots of mushrooms if you are not going to add them back and only want the flavor- also cook with a lil water or wine splashed
remove mushrooms & mushroom juices from the sautee pan- set aside
add more oil or butter- heat
add flour, salt, freshly ground black pepper, nutmeg (a dash), sage and thyme to make a flavor full roux- whisk on a fairly high heat till the color of the flour turns brown and gives a nutty scent
slowly add vegetable stock- home made is the best
and ought to contain carrots, celery, parsley, onion, garlic, etc.
if you buy veg stock, buy more than one kind and try them out first or go with a time honored fave of yours.
add the mushrooms or mushroom stock thru strainer
if you eat dairy - add cream
add nutritional yeast
